Jason’s Fallow Loin Chop Schnitzel

After a few mates asked how I cooked these I thought I would share
Firstly you will need:
Cheapo bread crumbs
Couple of eggs
Southern fried chicken coating mix or like
and of course your meat.
These are 14 day dry aged fallow loin chops , i have used this recipe on everything for roo to buff

hunting 1 Jasons Fallow Loin Chop Schnitzel

Using meat mallet , hammer out chops till they are nice and thin

hunting 2 Jasons Fallow Loin Chop Schnitzel

Next dip in your beaten egg mix

hunting 3 Jasons Fallow Loin Chop Schnitzel

Then cover with a 50/50 mix of coating mix and bread crumbs

hunting 4 Jasons Fallow Loin Chop Schnitzel

Set aside for five minutes to dry and settle

hunting 5 Jasons Fallow Loin Chop Schnitzel

Shallow fry in vegetable oil or bacon fat

hunting 6 Jasons Fallow Loin Chop Schnitzel

Cook until golden brown and place on kitchen towel to drain

hunting 7 Jasons Fallow Loin Chop Schnitzel

Serve up and hog out ,
